Quick, Delish Mushroom Soup
Ingredients:
1/2 tablespoon oil
16 ounces sliced mushrooms sliced
8 cloves minced garlic
1/2 large onion, about 3/4 cup, finely diced
1 teaspoon salt ( I omit because hubby has high blood pressure) and ground black pepper
3 cups high quality vegetable broth
one 13.5 ounce can of coconut milk (about 1 and 1/2 cups) 4 sprigs thyme, stems removed
Add cooking sherry to taste….
Instructions
Heat oil, add mushrooms, garlic, onion and salt and pepper. Stir together and saute until mushrooms begin to release their natural juices and become frant, about 8 minutes.
Pour in vegetable broth and coconut milk. Add thyme. Stir, bring to a boil, then simmer for 15 minutes.
Cool down
Scoop out 2 cups of soup (with some mushrooms) and pour into your blender. Pour back into soup pot and blend one more time.
